  • Dry Ingredients: 145g all-purpose flour and 25g cocoa powder (sifted)
  • Leavening: 1/2 tsp baking powder
  • The "Crunch": 125g cacao nibs and 150g dark chocolate chunks
  • Salt: A generous pinch of sea salt

Instructions

  1. Prep the Oven: Preheat your oven to 180°C (350°F) and line a baking sheet with parchment paper.
  2. Mix the Base: In a large bowl, whisk together the melted butter, brown sugar, caster sugar, and salt. Add the egg and mix until smooth and combined.
  3. Combine Dry Ingredients: Fold in the flour, sifted cocoa powder, and baking powder. Stir until just combined (don’t overmix!).
  4. Fold in the Chocolate: Add the dark chocolate chunks and the cacao nibs. The dough will be thick and heavy—that’s exactly what you want for a fudgy cookie!

  • Creaminess: 1 cup nut butter (almond or cashew butter works best for a neutral flavor)
  • Sweetener: 1–2 tbsp maple syrup (adjust to your taste)
  • Texture Boost: 1 tbsp coconut oil (optional, use if your nut butter is very thick)

Instructions

  1. Blend: Place the cacao nibs, nut butter, maple syrup, and coconut oil in a high-speed blender.
  2. Liquefy: Blend until the mixture transforms into a smooth, glossy, and silky liquid. Be patient—the nibs will release their natural oils and turn into "chocolate liquor."

Ingredients

  • The Star: 2-3 tablespoons of Cacao Nibs
  • The Base: 1 cup (8 oz) of filtered water
  • Optional Mix-ins: A splash of oat milk, a dash of cinnamon, or a drop of honey/maple syrup.

Instructions (French Press Method - Recommended)

  1. Grind (Optional): For a bolder flavor, give your cacao nibs a quick pulse in a coffee grinder. You want a very coarse grind (like sea salt). If you prefer a lighter, tea-like drink, use them whole.
  2. Heat the Water: Bring your water to a boil, then let it sit for a minute to reach about 95°C (200°F).
  3. Combine: Add the cacao nibs to your French Press and pour the hot water over them.
  4. Steep: Let it steep for 5 to 7 minutes. Unlike coffee, cacao takes a bit longer to release its full flavor and theobromine.

Ingredients

  • The Base: 1 cup (225g) unsalted butter, softened
  • The Sweetness: ¾ cup (150g) granulated sugar and ¾ cup (150g) packed brown sugar
  • The Lift: 2 large eggs and 1 tsp vanilla extract
  • The Dry Mix: 2 ¼ cups (280g) all-purpose flour, 1 tsp baking soda, and ½ tsp salt
  • The Star Ingredient: ¾ cup (approx. 100g) Cacao Nibs

Instructions

  1. Prep Your Station: Preheat your oven to 375°F (190°C). Line your baking sheets with parchment paper or silicone mats.
  2. Cream the Butter: In a large bowl or stand mixer, cream the butter and both sugars together until the mixture is light, fluffy, and smooth.
  3. Emulsify: Add the eggs one at a time, beating well after each. Stir in the vanilla extract.
  4. Incorporate Dry Goods: Sift the flour, baking soda, and salt. Slowly add this to the wet ingredients, mixing until just combined. Be careful not to overwork the dough!
  5. Fold in the Nibs: Using a spatula, fold in the cacao nibs. Unlike chocolate chips, these won't melt, so they will be evenly distributed as little "crunchy jewels" throughout the dough.
