Ingredients:
- 8 Ceremonial Cacao coins
- 2 eggs ( separate egg whites from egg yolks )
- 1 tbsp Coconut Sugar
Procedure Steps:
- Using a water bath melt the cacao coins. While the cacao is melting, separate the eggs yolks and set them aside.
- Add the egg whites in a mixer and begin to beat while pouring in the sugar, beat until stiff.
- From now on try to be as fast as you can so we can get the right mousse texture
- Incorporate the eggs yolks one by one in to the melted cacao.
- Using a hand mixer add 1/3 of the meringue and mix well, incorporate the remaining meringue with a spatula.
- Serve the mixture in a bowl and refrigerate for at least 8 hours.
- Enjoy your mousse as it is, with berries, cacao nibs, or whatever you like, be creative. If you are using skyr yogurt make sure its really cold and add a pinch of honey.
