The cost of real chocolate
The honest answer to 'why not $4 like the grocery store' is that this cacao is bought direct from small Peruvian growers at above-market rates in exchange to exceptional post harvest process, not through a commodity exchange — and it's made bean-to-bar in-house, not blended from someone else's already-processed chocolate. Both cost more upfront. We'd rather be upfront about that than quietly cut corners on where it comes from.

For us it starts even earlier: we hand-select whole beans, not pre-processed nibs, bought directly from growers in Peru. Less bean-to-bar, more farm-to-bar.

No. The 100% bar has nothing added at all. The 70% bar is sweetened with coconut sugar instead of refined cane sugar, and the 53% (Unmilk'd) bar gets its milk-chocolate-like sweetness from lucuma, a Peruvian fruit — no dairy, no refined sugar in any of the three.

Keep them in a cool, dry place away from direct sunlight, ideally in an airtight container or their original wrapper to hold onto aroma and freshness — refrigeration isn't necessary unless your home runs hot. Over time you may notice a light white or grey film on the surface (called bloom); that's just cacao butter or sugar separating, not spoilage, and it's still safe to eat.

Higher percentage means more intense, less sweet, and more of the cacao's natural flavor coming through — which is why the Set moves from 100% down to 53%, so you can taste that intensity curve directly instead of guessing from a number on a wrapper.
