Sourced from small family farms in the Morropón region of Piura — on Peru's northern coast — this cacao grows in one of the most unlikely places on Earth for cacao to exist. The Sechura Desert sits just 5 degrees south of the equator, where you'd expect jungle. Instead you find sand, wind, and almost no rainfall. The Andes block moisture coming from the Amazon, and the cold Humboldt Current off the Pacific prevents rain clouds from forming. The result is a tropical desert — warm, dry, sun-drenched, and utterly unlike any other cacao-growing region on the planet.

Yet cacao has thrived here for over a thousand years. Fed by narrow rivers flowing down from the Andes, small farming families in the Piura valleys have cultivated white cacao using traditional methods passed down through generations. This origin has been prized by specialty chocolate makers worldwide — and for good reason.

A note for new explorers: Tropical Desert cacao is our most complex origin. Its bright, fruit-forward profile can surprise first-time drinkers — some initially read the natural acidity as sour. It isn't. That brightness is a sign of quality: the white cacao genetics produce lower tannins and a cleaner, more delicate flavor than jungle cacao. Give it a second sip. White cacao — less than 0.1% of the world's cacao

The Piura white cacao adapted over centuries to survive in desert conditions — with 10 times less water than jungle cacao requires. Because desert ecosystems have fewer insects and predators, the tree developed fewer tannins as a defense mechanism. How to prepare your cup

  1. Add 4 cacao coins (or 21 g chopped cacao) to your cup and cover with a small amount of hot water.
  2. Wait 45–60 seconds, then stir until smooth. This is your cacao base.
  3. Add spices to taste — ginger, cardamom, cinnamon, white pepper. Add honey if you like sweetness.
  4. Add 6 oz of hot water or your milk of choice, then stir or blend until velvety.
  5. Pause. Set an intention. Sip slowly. Make it your own.
